Orange Pineapple Sunshine Cake

Cake
- 1 box yellow cake mix
- 1/4 cup applesauce
- 4 eggs
- 1 can (11 oz) mandarin oranges in light syrup
Frosting
- One 8 oz container light whipped topping, thawed
- 1 pkg. (3.4 oz) instant vanilla pudding mix
- 1 can (15.5 or 20 oz) crushed pineapple in juice
- Preheat oven to 350 and spray a 9 x 13 cake pan with nonstick spray.
- Mix all the cake ingredients in a large bowl until moist. Beat on medium for 2 minutes until combined.
- Pour batter into pan and bake 30-40 minutes until a toothpick inserted in the middle comes out clean.
- Cool completely.
- For the frosting, simply mix together all ingredients in a large bowl and spread over cake.
- Store in the fridge.
